Orange Marmalade Marinated Salmon

橙皮果醬 (orange marmalade) 同普通果醬相比味道偏苦, 用嚟搽麵包唔係人人鍾意, 但係用嚟做自家製BBQ醬或者配三文魚就既特別又好味~
Ingredients: Marinade
Orange marmalade 2/3 cup (or use fresh orange juice 2/3 cup) Rice vinegar 1/3 cup Soy sauce 1/3 cup Minced garlic 1 teaspoon Grated fresh ginger 1 teaspoon Dried onion flakes 2 teaspoons Sesame oil 1 teaspoon Olive oil 1 teaspoon Salmon fillets 2.5 lbs , washed and towel dried Scallion sliced (to garnish) Directions:
Marinate salmon with the first 8 ingredients for 1 hour.
Heat oven to 200C.
Remove salmon from marinade and grill in oven for 5-7 minutes.
Meanwhile, bring the marinade to a boil then reduce heat to simmer till fish is cooked.
Turn salmon over and grill for another 5-7 minutes.
Serve salmon onto plate, drizzle the reduced marinade and garnish with scallions.
